Hot bread at 6:30
Sourdough baked overnight, morning buns, a galette that changes with the season and drip or espresso from a roaster up the road, on the counter from 6:30 every morning but Monday. Come early: the board usually sells out by early afternoon.
Today's board
What came out of the oven this morning, and what is already gone. We bake once, overnight, so when it's gone it's gone until tomorrow.

A cake for your table
Chocolate rye, carrot with brown butter, or whatever fruit is good that week. Give us three days and tell us how many you're feeding.

Baked while you sleep
Two bakers on the night shift, three of us on the counter in the morning, one oven that never really cools down.

How a loaf gets to 6:30
Every loaf on the board started the afternoon before. This is the shift.
- 3:00 pmMix. Levain, flour from a mill in the valley, water, salt. Then it rests.
- 10:00 pmThe bakers come in. Folds every half hour while the dough wakes up.
- 1:30 amDivide and shape, by hand, on the long bench by the window.
- 4:30 amFirst loaves into the oven. Buns and croissants follow.
- 6:30 amDoors open on Juniper Street. The board goes up.
A counter, eight stools, one long window
Bring the dog, bring the kids, bring your own cup if you like. Leftover bread goes to the food pantry on Alder Street at two.

Said at the counter
- M. T.Lives two blocks up
I set an alarm for the morning buns on Saturdays. Worth it every time, and the drip is better than it has any right to be.
- R. A.Commutes past
In and out in three minutes with a loaf and a cortado. They remember my order, which is a little embarrassing.
- J. and P.Visiting for the weekend
We came for coffee and left with two loaves and a galette for the drive home. The seeded rye survived until Tuesday.
- S. K.Ordered a birthday cake
Chocolate rye for twelve, ready when they said, and nobody left a crumb. They wrote on it in yolk-yellow icing without me asking.
Leave one on your way out
We read every review, and we read the ones that sting twice. If something was off, tell us at the counter and we'll fix it the same day.
